Miso Roasted Eggplants

  • 1 eggplant, cut in half. 
  • 1 tbs mirin
  • 1tbs sake
  • 2 tbs yellow miso 
  • 1/2 teaspoon sesame oil 
  • toasted sesame seeds


  1. Preheat oven to 220C .
  2. In a saucepan put mirin and sake over medium heat and simmer for 2 minutes. Add miso and stir until smooth.
  3. Brush the sides of the eggplants with sesame oil. Put the eggplants skin up on a baking sheet and roast until tender, around 20 min. 
  4. Turn over the eggplant, add the miso sauce and broil them until caramelized, 2 min. 
  5. Remove from oven, add sesame seeds, rest for 5 min and ready to eat!!
