- 1 eggplant, cut in half.
- 1 tbs mirin
- 1tbs sake
- 2 tbs yellow miso
- 1 tbs of raw sugar
- 1/2 teaspoon sesame oil
- toasted sesame seeds
- Preheat oven to 220C .
- In a saucepan put mirin and sake over medium heat and simmer for 2 minutes. Add miso and stir until smooth. Reduce to low heat and add sugar, cook until sugar is disolved.
- Brush the sides of the eggplants with sesame oil. Put the eggplants skin up on a baking sheet and roast until tender, around 20 min.
- Turn over the eggplant, add the miso sauce and broil them until caramelized, 2 min.
- Remove from oven, add sesame seeds, rest for 5 min and ready to eat!!
